You can easily change the size of the thumbnail, but it’ll be uniform for all posts. You can’t specify custom thumbnail size for individual posts, unless you do some custom coding in the template.

Which meta tags exactly are you trying to remove? Also, provide a link to your site so that we can take a look.

FYI, most of the meta tags are added by WordPress, not the theme.
