But really, why not take a bit of extra work to make your current website works with the new theme instead of reverting back and staying in an older version?

You could modify the CSS to get greater separation between the menu items.
But if you still want to revert back to 1.1.4, all you need to do is delete the current theme and then upload version 1.1.4. You can get version 1.1.4 here: http://wordpress.org/extend/themes/download/graphene.1.1.4.zip?nostats=1
Note though that version 1.2 hugely improves the handling of the theme’s options for performance. For this reasion, when you revert to 1.1.4, your current theme’s options will be lost, and you will need to set them up again.

Firstly, I wouldn’t recommend it since transparent background really don’t play well with IE7.
But if you must have it, your best bet would be to create a partially-transparent background square of the colour you want in Photoshop, and save it as a PNG format. For example, if you want a white background that is 30% transparent, create a small (maybe 10px by 10px) square white background with visibility set to 70% in Photoshop. Then create a child theme, upload the image into that child theme, and use CSS to have the particular elements that you want to have semi-transparent background to use the image you’ve created as a repeating background.

In addition to Kim’s reply, the display options and general options pages have now been merged into a single “Graphene Options” page, and separated by tabs.

In the theme’s options under the display tab, in Post Display Options, there’s an option to show excerpts on the front page.
