Do those posts have featured image? If not, you might want to change the slider option to use “First image in post” rather than featured image.

The footer menu only supports single-level menu at the moment. This was a design decision in keeping the footer clean and simple.

For more elaborate menu in the footer, I would suggest to make use of the Footer Widget Area. You can customise the number of columns and insert a lot more content there than would be possible in the footer bar.

If you meant can you use colour palettes to change the header text colour, then yes, in Customizer > Colours > Header Text Colour.
