Create a blank custom menu by going to the Appearance > Menus page in the admin panel, and then use that menu as the Header Menu.

Try installing the Codestyling Localization plugin. It allows you to translate the theme’s strings, but you can also use it to create a separate language file with the strings that you want to modify.

Somehow for your site a whole lot of
<small>tags are outputted in the content pages.This may be caused by one of the comment plugins you use. Try deactivating them to see which one is the culprit.

It’s about adding Facebook icons to the right of the RSS icon, but really anything can be added using the same method, including the site title or plain texts.

The method you outlined is of course, easier, but is not recommended. This is because it involves editing the theme’s core files directly, which will cause you to lose the modification the next time you update the theme.
