For adding content into the slider that’s not the usual slider posts’ excerpts, thumbnails, etc., you can use the WordPress action hooks that are available inside the slider.
Try installing the Codestyling Localization plugin. It allows you to translate the theme’s strings, but you can also use it to create a separate language file with the strings that you want to modify.
Do you mean the slider is still there? You can disable it through the theme’s options page. There’s the Disable slider option under Slider Options in the Graphene Options admin panel.
It’s about adding Facebook icons to the right of the RSS icon, but really anything can be added using the same method, including the site title or plain texts.
The method you outlined is of course, easier, but is not recommended. This is because it involves editing the theme’s core files directly, which will cause you to lose the modification the next time you update the theme.
