You will need to create a custom menu via WP Admin > Appearance > Menus.

Then, disable the “In this section” menu via WP Admin > Appearance > Customize > Franz Josef: Display > Posts > Disable child pages navigation.

Looks like you have a missing </div> in the “Kontakt mig” widget. Just add it at the end of the widget and that should fix it.

Yes, you can use the slide-out panel as a menu by adding a menu widget into the slide-out panel widget area. The slide panel works as a widget area, so you can place any widget to be displayed in the slide-out panel, including a menu widget.
