Custom fields are not displayed anywhere by default. You would need to manually add them in the theme (or by using a child theme).
Some themes (and plugins) do have built-in custom fields – in fact this is how Graphene provides the per-post and per-page options. Other than those built-in custom fields, you would have to manually add (and style) your custom fields yourself.

The intent was to only add text as caption. That way, the full focus of the post will be on the image. If there’s to be a lot of text that can’t fit as caption, it’s better to use a standard post instead.
The same goes for the “video” post format, but the intent is really to have no text at all at all for videos, except for the title.
Though I suppose it won’t be difficult to modify the line height if you think it’s better to be able to add text.

I think the point that Kim meant is that it’s generally a good idea to provide a link to your website when asking for support. That way we can take a look at the actual website instead of just guessing what you want to achieve.
