Your monitor is not a television screen. That space on either side is not wasted; it is what keeps your content to an optimal width for reading even on very wide monitors. Without it, your content becomes so wide that it is difficult to read. Any site that is difficult to read is a real disincentive for people to return to it.
I would like to know what I need to do in order to get the box wider, but not always, but when the user is on a wide screen.
You are describing a fluid-width theme. Graphene is not a fluid-width theme.
