I am using the wp-pagnav plugin and it is working perfectly. However I would like to split up some longer posts (http://blog.noisegate95.com/archives/1298) into 2 or 3 pages. The boring old <!–nextpage–> shortcode is really ugly, and gets lost in the page.
I would like to utilize the wp-pagenav plugin and style for the multi-page posts. After much searching, I cannot seem to find out how to do this.

As far as I know, this plugin cannot be used for breaking single posts into multiple posts. There are, however, plugins that can do this. Check the plugin repository.
